Have a go at baking this indulgent chocolate brownie from Bakers & Co, the sourdough bakery and provisions store on Gloucester Road. 

You'll find one of these brownies in their Mother's Day pastry bundle, along with a white chocolate, rhubarb, rose and pistachio danish and a dark chocolate and hazelnut babka. 

Dolce de leche brownie by Bakers & Co

Dulce de leche brownie recipe

You'll need a 22cm x 32cm x 3cm baking tray. You'll also need a sourdough starter, which you can make in advance (allow a week) using this Bakers & Co recipe if you don't already have one. 

Serves 12.


190g condensed milk (half a 397g tin of condensed milk)
315g dark chocolate
315g unsalted butter
35g golden syrup
8 eggs
440g caster sugar
30g cocoa powder
315g sourdough starter


Prior to following the recipe below, submerge the tin of condensed milk in a pot of water and boil for around 4 hours. This will be your dolce de leche.

Pre heat the oven at 180°C. Melt the dark chocolate, unsalted butter and golden syrup over a bain marie. In a separate bowl whisk 8 eggs.

Once the mixture in the bain marie is melted remove from the heat and whisk the sourdough starter, cocoa powder, caster sugar and whisked eggs into the melted chocolate mix. Line your baking tray and poor the mix in. Spoon out chunks of the dulce de leche and scatter across the top of the raw brownie mix.

Bake at 180°C for 45 minutes to 1 hour (or until a knife comes out clean from the centre of the brownie). Allow the brownie to cool and then portion!
