The Avon Gorge offers many different climbing routes of different levels so previous experience is not required. Climbing from the bottom to the top of the gorge is always a fun experience, especially if you climb the route that finishes next to the ice-cream van! Another possibility is the route that ends with a unique view of the Clifton Suspension bridge.
