Here are two easily prepared Mexican inspired dishes by Masa + Mezcal, for you to make at home.

Masa Hotcakes

Hotcakes at Masa + Mezcal Bristol

  • 300g GF flour
  • 130g Masa Harina
  • 4 eggs
  • 120g Sugar
  • 2 tbsp baking powder, sieved
  • 1 tsp bicarbonate of soda, sieved 
  • Pinch of salt
  • 2 tsp vanilla paste
  • 3½ buttermilk
  • 100g melted butter

Combine the flours.

Whisk the egg, sugar and raising agents untill it is pale and ribbony. 

Add the buttermilk and vanilla.

Add flours and salt.

And add the melted butter.

Cooking the hot cakes:

It works best to have your batter mix made and rested for at least and hour and at room temp.

Select your pan size – at Masa they use small egg frying pans. Get the pan hot (on medium to high heat on the stove) Once hot add a small amount of butter, lightly melt it, stir it around the whole pan - but do not burn it!

Put a ladle or 2 tablespoons worth of batter into the pan, control the heat

Achieve an even brown/caramelized colour on the first side. (2-3 minutes) Flip it to the other side using a palette knife or onto another clean small pan or ontop a plate then slide it back on the same egg pan. 

Essentially colour both sides nicely then serve!

If making multiple hot cakes, leave the first ones made covered in a tea towel to stay moist/fresh and hot for when they are all ready to eat.

Aguachile Verde (2ltrs)

Aguachile Verde at Masa + Mezcal Bristol

  • 3 cucumbers
  • 6 green chilis
  • 1 small white onion
  • 6 cloves of garlic
  • 3 bunches of coriander 
  • 300ml lime juice

Rough chop and blend with the stick blender until it is smooth.

Do not add any salt as it will discolour the salsa, instead season to order during service.
