Jon Finch, co-owner of Quay Street Diner, shares with us this hearty, nutritious traditional Mexican breakfast that works beautifully at home in your oven or the stove top.

Fast and easy to prepare, it’s a good one to make if you are cooking for the whole family. Use a bigger pan or baking dish and make a big sharer brunch from it. I’ve eaten this a number of ways, the traditional being some flash fried corn tortillas as the base with fried eggs and a thick spicy salsa piled on top. Delicious. The less traditional but equally tasty way to cook up a dish of sauce and cook the eggs directly in there. I prefer the latter and that’s how we make it in the diner.

Ingredients

This recipe is designed for 4 people:

  • 4 large free range eggs
  • 1 clove garlic, crushed
  • Half a white onion
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 1/2 tsp chipotle powder or chipotle paste
  • 1 tbsp tomato puree
  • 2 tins chopped toms / 1L passata
  • Small lunch coriander
  • 1 jalapeño chilli, finely sliced
  • Small handful of crumbled feta
  • 8 tortillas, wrapped in foil and warmed in the oven for 5-10 mins or crusty toasted bread 

Method

Add the oil and onion and garlic to the pan and fry gently. Don’t let the garlic brown or it will go bitter.

Stir in the spices and tomato puree then continue to cook for another couple of minutes.

Add the chopped tomatoes and continue to cook for around fifteen mins, stirring every now and then.

Using the back of a dessert spoon, make four ‘dents’ in the sauce and carefully crack an egg into each.

Slide back into the oven for 4-5 mins until the eggs are cooked but the yolk remains runny.

Sprinkle with the chopped coriander, feta and chilli.

Serve with a stack of warmed tortillas or crusty toasted bread.

Top tip

Once you have warmed the tortillas, keep them in the foil pack and wrap the whole pouch in a towel or place inside a small cool box to keep nice and warm until you are ready to serve.
