The story of Wiper & True
Wiper and True are a Bristol-based independent craft beer brewery focusing on creating refined, carefully considered beer. The brewery started life in 2012, when three friends - Michael, Al & Cesca - began creating homebrew on their kitchen stovetops. After an incredible response and several years producing and bottling nomadically at other breweries, Wiper and True built their first brewery in St Werburghs in 2015, where they’ve been based ever since.
In 2020 the team opened an additional production site, providing even more opportunity to create delicious beers. The Barrel Store is home to an exciting programme of barrel-aged beers and recipes using wild yeasts and unusual foraged ingredients.
In summer 2022 the Wiper and True team moved to their beautiful new headquarters in Old Market, right in the middle of the East Bristol Brewery Trail. At this exciting new venue the bespoke brewkit, designed by German experts, stands majestic and tall, right alongside the taproom seating, offering drinkers a unique view onto the processes behind the pints.
For anyone interested in the brewing industry, production-side seating offers the ideal vantage point to enjoy a beer right in the heart of it all, soaking up every aspect of a contemporary working brewery. With a flourishing bounty of houseplants, beautiful design features (hello, floor-to-ceiling glass windows) and the friendliest team, the taproom is also just a downright lovely place to enjoy a few drinks.
Sustainability
Wiper and True we are constantly working to become the most sustainable brewery that they can.
Features include; locally-sourced produce, plant-based options on the menu, reduced plastic use, in-season led menu, food waste policy, water-saving policy, electric car charging point and solar panels.
Wiper and True havr installed a revolutionary carbon dioxide recovery system - the second of its kind in the country. This means the brewery can now recapture the CO2 created as a by-product of fermentation, meaning this is no longer released into the atmosphere, or contributing to the business's carbon footprint. Amazingly this unit has capacity to capture up to 60-70 tonnes of CO2 per year.
